The 4 course menu is plant-based, and composed with locally sourced products and seasonal vegetables. After a simple final touch, the dishes can be served to your table instantly. 

Starter
Beetroot salad with red beet in salted crust, fermented carrots, cannelloni beans and blackberries, served with bread.

First course
Velouté of grilled leek and potatoes, with grilled pear, fermented turnips and grapes, served with coriander.

Second course
Cartoccio of oyster mushrooms with braised fennel and five spices.

Dessert
Confit Saint Remis pears, chocolate mousse and blackberry compote.
